Mancini Chitarra is produced in a factory directly on top of their durum wheat fields! Semolina and water are the only ingredients. Cut with circular bronze die plates, the pasta is dried at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta.
